Watermelon can be cut into fun shapes and mixed with blueberries and other melons to make a colorful fruit salad. Fresh mint or basil can be added to enhance the flavor as well. Lately, I have seen a lot of sliced watermelon topped with different flavors of sorbet.
Since crisp fruits and vegetables may be off limits, pureeing fruits and veggies to create delicious smoothies can be a great option. AND, not only are you getting their fruits and veggies in, but you can use Greek yogurt or protein powder to increase the nutritional value.
Summer Smoothie Recipe
1/2 cup of carrots (cut up)
1/2 cup of orange juice
1 cup pineapple (cut into chunks)
6 ounces of Greek yogurt
1 Tablespoon of honey
1 cup of ice
Add all of the ingredients in the blender and mix until it has reached a smooth consistency. If the smoothie seems too thick, you can always add regular milk, almond milk or coconut milk to it.
